Our elaboration process
 

Flour that is used in the preparation of pasta is prepared with semolina, a product that is obtained from endosperm of a kind of wheat called durum.

 

Once you have opened the package of pasta, if you do not use at all, keep the rest in a glass container that has a top, it can be of cork or glass, the secret is that air do not enter.

Pasta contains proteins but more than this contains carbohydrates, its main function in human body is being a component of the cellular structure and an important part of control of our metabolism besides provide energy.

Pasta elaborated with semolina of hard wheat gives a better consistency when its cook, is not disintegrate, it not lose its form and leaves clean and colorless the water where is cooked. Its flavor it is pleasant to the palate and absorbs easily juices and sauces.



Durum wheat contains a large portion of gluten, the protein of wheat responsible of afford elasticity of pasta.
