Cheese Over Elbow Macaroni

Ingredients

  • 1 box Elbow Golden Harvest®

  • 7 oz. bacon finely chopped

  • 7 oz. curd

  • 2 tablespoons cotija cheese

  • 2 tablespoons coriander finely chopped

  • 8.8 oz. crushed tomatoes

  • ½ glass of red wine

  • ½ onion finely chopped

  • 2 tablespoons olive oil

  • Salt and pepper

Preparation

  • In a pan with olive oil fry the onion, add the bacon and red wine, let it boil and add tomatoes.

  • Cook over low heat for about 15 minutes and add salt and pepper.

  • In a bowl apart mix the curd with the cotija cheese and the coriander until getting a soft cream.

  • Make small balls like an olive size.

  • Cook pasta according to package directions and drain.

  • In hot, season with the sauce and the cheese balls.
