1 box Elbow Golden Harvest®
7 oz. bacon finely chopped
7 oz. curd
2 tablespoons cotija cheese
2 tablespoons coriander finely chopped
8.8 oz. crushed tomatoes
½ glass of red wine
½ onion finely chopped
2 tablespoons olive oil
Salt and pepper
In a pan with olive oil fry the onion, add the bacon and red wine, let it boil and add tomatoes.
Cook over low heat for about 15 minutes and add salt and pepper.
In a bowl apart mix the curd with the cotija cheese and the coriander until getting a soft cream.
Make small balls like an olive size.
Cook pasta according to package directions and drain.
In hot, season with the sauce and the cheese balls.
